Sounds easy enough if you only want to "hide" a number of domains. But what
if the desire is actually the inverse - you only want to resolve a fixed set
of domains and have every other name query return a predetermined IP address?

Using BIND (and I imagine any other DNS software), you can just declare
your nameserver authoritative for those zones and stick in any address
record you want. The nameserver is going to answer with any answer that
it finds in its cache first, since the server is authoritative for the
zone, it will answer back. This will only work, however, if the user is
using that nameserver as their resolver.
