Sure 80% of the customers might eat one plate but what about a fat ass like me who wants 3? Only three? Pansy. :-) Back in my polyphagia days, I could do five plates... and my BMI was 23 or 24 at the time. Nowadays, two (occasionally three) piled-high plates, a pint or two of soup, and several pieces of bread (total 200-240 grams of carbohydrate max, plus however much fat and protein) is about all the bigger I go... and that's a big lunch that usually means no dinner that day. Yeah, my BMI is a hair above 25 now. Coincidence? ;-) If one advertises "unlimited", people _will_ utilize it. In my case, the place where I eat is losing money. Even my monster lunches serve to help offset their losses, despite the per-unit numbers being in my favor. A place burning through money... gluttons partially offsetting the total losses, even though being individually unsustainable... hey, does this sound familiar to anyone?
